Despite its remoteness though, the temperature is relatively steady across the year (rarely varying out of between 2 and 16 degrees) which is perfect for maturing whisky. Together, Gordon Motion, Max McFarlane and John Ramsay chose and married three principal cask types, with the aim of exploring the influence of wood and cask seasoning. Allt Gleann’, the second expression of single malt Scotch whisky from Torabhaig distillery, released as part of The Legacy Series. This heavily peated whisky was made using a mix of Concerto and Laureate malted barley with an in-grain phenols content of 77+PPM. Matured in a combination of 1st fill bourbon barrels and refill whisky barrels then bottled at 46% vol without chill-filtration or additional colouring. Torabhaig was the first distillery to be build on the Isle of Syke in 190 years.
